How can I find times for sunrise/sunset which was available in the Yr API?

This is a separate product on api.met.no, not a part of Locationforecast. You can find the documentation for the Sunrise API here.

Which of the many products on api.met.no have full global coverage?

Currently the only services with full global coverage are Locationforecast, Frost (observations and climate) and TAF/METAR (airport weather conditions).

The wind speed term (Beaufort Scale) is missing, how can I find this?

The Beaufort scale data has been removed to make the output language independent. It's trivial to translate from windspeed to Beaufort in your own language by using the standard table, e.g. from Wikipedia.
